Mango Season Arrives!

It’s shaping up to be another good mango year! Some recipes our guests will be sampling…

#1-MANGO BELLINI COCKTAIL

1 cup diced ripe mango (fresh of course, never frozen)

lime juice (one or two squeezed)

Chilled Prosecco

Blend mango and lime juice until smooth. Pour half of a champagne glass with mango puree and the other half with Prosecco. It will bubble and may overflow so slurp away 🙂

 

 

#2- ISLAND MANGO SALAD

2 cups diced ripe fresh mango

3 tbsp chopped fresh cilantro

1/4 cup vinegar

coarse sea salt or seasoned salt

ground cumin

1 or 2 chopped green mutton peppers

In a bowl mix mango with vinegar and cilantro. Sprinkle cumin, salt and peppers to your choice of taste. Chill and enjoy!
