Exciting news to our gourmet food lovers, Chef Francisco Andrade from the capital city of Tegucigalpa residing now on Roatan, is now available to satisfy our guests with the perfect combination of fresh local ingredients and international flavors like Mediterranean, Italian, Thai and Japanese.
Francisco’s service can be easily arranged by our manager for lunch, dinner, or special events.
We’re also proud to announce that the entire staff at Casa Vista Verde passed the Certified Open Water Certification! They can now personally share the experience of the amazing underwater world surrounding Roatan. Over this coming year, Hector is expected to continue his dive education, through Rescue Diver.

“Our stay at Casa Vista Verde on the beautiful island of Roatan was a vacation of a lifetime. The villa itself was amazing. Built on a hill overlooking the second largest reef in the world, the villa provided breath taking views which never got old. The layout of the villa was excellent, five bedrooms, each with a private bath. The patio with an infinity-edge design pool, outdoor spa, super comfy chaises, and tables and chairs was the place to be when we weren’t experiencing the remarkable attractions around the island. If the pool wasn’t enough, the beach was a short walk down the stairs from the villa. The things to do on the island seemed to never end, which is why we are planning our next trip to Roatan. The villa supplied kayaks were great fun, paddling around the cove. We jet skied for an afternoon and took a sunset horseback ride on the beach and through the water to a neighboring island which was beautiful. The snorkeling was perhaps my most vivid memory. The beauty found in the reef, a 10 minute boat ride from the villa was something I have never experienced. The food was amazing. The great people at the Casa Vista Verde provided a daily breakfast which rivaled any 4-star restaurant in the states. We enjoyed dinners prepared by chef Francisco, who made grilled lobsters tails over risotto, filet mignon, grouper, and ribeye steaks. Each meal was served like a work of art. The staff at Casa Vista Verde was incredible. Ana was our cruise director, and her attention to detail was perfect. From coordinating transportation, meals, and provisions for our stay, we knew we were in a well-oiled machine that went on like clockwork. Sayda and Joselyn were working their magic in the kitchen. Hector and Neptali took care of the the grounds and the kayaks and other boats. The villa was always clean and the staff managed to do our laundry each day. This is the first vacation that I went home with a suitcase full of clean clothes! Our week at Casa Vista Verde and the island of Roatan was a trip of a lifetime!”

Casa Vista Verde Roatan is pleased to welcome private chef Francisco Andrade to our service staff! If you’ve ever dined at the Vintage Pearl or Ibagari (two of our favorite restaurants on the island), there is a good chance you have already tried his cooking. Chef Francisco is from Tegucigalpa, on the mainland. While a Honduran native, he graduated from Le Cordon Bleu in Miami, and perfected his skills working in Costa Rica, Mexico, Guatemala and the US with Mediterranean, Italian and Japanese gastronomy. Now residing on Roatan, his creations are a fusion of Island local fresh products and his inventive personal touch to satisfy your palettes. Although he’s only been with us a short time so far, he is already receiving rave reviews, like the following:

Beach raked, campfire wood stockpiled, coconuts harvested, mangos and plums on the way, villa washed, woodwork varnished, patio pressure washed, fresh gravel on the driveway, road graded, landscaping spruced up, water pumps upgraded, skies are clear…looks like we’re ready for busy season… (which starts tomorrow!)

Greetings from Casa Vista Verde! Hoping our annual newsletter finds everyone safe and prosperous! This year saw a number of exciting events and changes for the villa and Roatan:
This past May was a milestone for Casa Vista Verde- for the first time, hosting a wedding for a couple who were engaged on our beach during an earlier visit! Whitney and Peter were married in a beautiful ceremony surrounded by tropical greens, ocean blues, and a golden sunset sky! Afterwards, the bride left us with these comments:
“I spent two of the best days of my life at Casa Vista Verde. My first best day was two years ago when my then boyfriend proposed on the back patio while looking at the best view of the Milky Way. We had an amazing week and could not think of a more wonderful place to get married. Here we are a little over two years later and we just returned to tie the knot at this slice of paradise. You can NOT go wrong in staying at this property. Beautiful landscape, amazing pool, and the staff feels like family…all recommendations were on point, from the photographer, caterer and the wedding planner (which arranged a fireworks display for the ceremony). Our guests were so amazed by everything, that they stated this was ‘the best wedding they have ever been to.’”

For activities, the Buggies are back! Always popular with our guests, RoatanX now offers Dune Buggy Tours throughout the year. See the island like no other way! The 2.5 hour, mostly off-road tour crests breathtaking hills with 180 degree views of our barrier reef, all the way down to muddy puddles and sandy beaches.
Next, we introduce our newest member to the Casa Vista Verde family! Saida Santos joined us early this year as Assistant Manager. Originally from San Pedro Sula, she visited Roatan on vacation, liked it so much she came back to live, and that was twenty years ago! Her son Arick is at University on the mainland studying engineering. Saida strives to help fill our every guest request, and delights everyone with her ever-present smile!
To help lower energy costs for our guests, we recently converted the villa’s electric water heat tank system to an instant-on propane design. This system is already living up to its promise of higher efficiency, lower cost, and lower energy consumption. We took that as an opportunity to add another washer and a gas dryer to our appliance list, to help us service our guests even faster.
On that note, we also applaud RECO, Roatan’s electric utility, which made the switch from diesel to natural gas earlier this year! With 28MW of new generation capacity (in addition to their recently deployed wind turbines), power generation on the island gets cleaner, quieter, and more reliable!
In travel news, Sunwing recently announced direct winter service from Quebec starting December 18, and Cayman Airways has begun twice a week nonstop flights to Roatan from Grand Cayman, with connections from Miami, Tampa, Dallas, Chicago, Washington DC, and New York! Getting to Roatan is easier than ever! And with TripAdvisor naming Roatan their #1 destination in Central America, and Living the Salt Life ranking us #1 for scuba diving, there are plenty of reasons to come!
Finally, we’d like to thank everyone for their notes and calls of concern during the recent hurricane season. As the NOAA map shows, Roatan is well south of the main hurricane belt. In the 159 years since category storms have been tracked, Roatan has been affected by a total of 16 hurricanes (category 1 or higher). This works out to one hurricane roughly every ten years. By comparison, the Cayman Islands have been hit by 85 hurricanes over the same time period, or about one every other year. This year, hurricanes Harvey, Irma, Jose, and Maria all passed well east and north of Roatan (shown by the red star). Our thoughts and prayers are with the residents of Texas, Florida, Puerto Rico, and the other northern islands for a full and speedy recovery.
At Casa Vista Verde, it’s our mission to deliver vacations to remember. When we receive comments like these, we know we’re on the right track:
“Dear Asa and the Vista Verde Staff, as I sit here writing this on our last morning, I am sipping a mimosa and enjoying the view. I can’t believe how fast our week in paradise went by! The house and surroundings made this a wonderful vacation, but it was the staff who made it truly over the top! We have enjoyed immensely our time on Roatan, and we thank you for sharing your home with us for the week! We hope to be back again!”
So, the staff refresher trainings are complete, cars and boats all tuned, and villa and the grounds spruced up for the upcoming busy season. As these holidays approach and the year ends, we think about all we are grateful for, including all our repeat guests! We look forward to seeing you again soon!
Our newest guest activity arrives, and it’s a blast! The staff is now proficient on operation and guest instruction, so it’s available for guest use immediately! While it might be a few weeks until our videos look as good as the ones on the Subwing website (http://www.subwing.com/#), stay tuned for posting soon!
